Chef John Gallais, Executive Chef and co-founder of Maison Lucien in Hội An, has been recognised among the Top 20 Chefs in Vietnam by Epicure Vietnam Magazine, highlighting his contribution to French gastronomy and Vietnam’s evolving culinary scene.
Originally from Normandy, France, Chef Gallais has spent more than twenty-five years refining his craft across France, England, and Southeast Asia before establishing Maison Lucien in Hội An. This recognition celebrates not only his technical expertise but also his philosophy of respecting ingredients, preserving French culinary traditions, and embracing the exceptional produce found throughout Vietnam.

A journey across continents
John Gallais’s culinary career began in England before continuing in prestigious French kitchens, including the Hyatt Concorde in Paris and the renowned Potel & Chabot. He later became Head Chef in England, where his work earned multiple professional distinctions before he embarked on an extraordinary bicycle journey across Thailand, Laos, and Vietnam.
That journey transformed his vision of cooking. Inspired by local markets, family recipes, and traditional food cultures, he eventually chose Hội An as his new home. Read his full story on the Chef page.

Maison Lucien: a French bistro with a story
Together with business partner Vy Nguyen, Chef Gallais founded Maison Lucien with the ambition of creating one of Vietnam’s most authentic French dining experiences.
